Jewelled Salad (Christmas)

  • 150g curly kale sliced in ribbons
  • 38g pomegranate seeds
  • 75g red & green grapes halved
  • 1/2 orange
  • 1 tbsp apple cider vinegar
  • 1/2 tbsp maple syrup
  • 1 tbsp wholegrain mustard
  • cold water


  1. Cook the curly kale in a saucepan of boiling water for 6 minutes.

  2. Meanwhile prepare the dressing in a small bowl mix the apple cider vinegar, maple syrup and wholegrain mustard. Add a little bit of water to the dressing at a time until your desired consistency is reached.

  3. Drain the curly kale thoroughly.

  4. Into a serving bowl place the curly kale, pomegranate seeds, grapes and orange pieces. Drizzle with the dressing.
